Enough to stay present without diluting quality: typically twelve to twenty pieces depending on format mix. We would rather ship fewer strong assets than fill a grid.

Which platforms should we be on?

The ones your buyers use. For most consumer businesses that is Instagram and YouTube; for B2B it is LinkedIn. Being on all of them badly is worse than two of them well.

Do you handle customer complaints in comments?
